Be sure the cheese is grated, not shredded, so it combines well and mixes into the olive oil. Buy a block and grate the cheese yourself, or buy good-quality packaged pre-grated Parmesan.

To whip up a batch, place 1/2 cup extra-virgin olive oil in a small bowl. Add in grated Parmesan cheese, a clove of fresh garlic, a little balsamic vinegar, Italian seasoning, parsley, salt, and pepper and whisk everything together with a fork until it's well combined. That's it!

Cover and refrigerate the bread dip mixture for at least 4 hours or overnight to allow the flavors to mellow and meld.

Ingredients:

  • 1/2 c. extra-virgin olive oil
  • 2 T. grated Parmesan cheese
  • 1 clove garlic, finely minced
  • 2 tsp. balsamic vinegar

TRACEY'S NOTES:

  1. The noted 5-minute prep time does not include allowing refrigeration time for the bread dip flavors to meld. While the dip can be served immediately, refrigerating over night makes this dip's flavor so much better. The garlic taste can be "harsh" when served immediately. I very highly recommend preparing this dip in advance and refrigerating overnight.
